Lamb Pappardelle Recipe

A recipe from our chef mates Nathan and Eileen Booth at Burnt Ends Smoking Co. It's one of our favourite spots in Margaret River so we were thrilled when they agreed to create some homestyle recipes to go with our lamb boxes.


Serves 4





Ingredients


50 ml olive oil

8 forequarter lamb chops

1 leek trimmed and sliced

1 brown onion sliced

100 g cherry tomato

1 carrot peeled and sliced

6 cloves garlic

6 sprigs thyme

6 sprigs rosemary

½ cup plain flour

2 tbsp smoked paprika

1 tbsp salt

125 g butter cubed

250 ml red wine

250 ml passata

250 ml chicken stock

250g pkt pappardelle

4 sprigs flat leaf parsley

50 g pecorino shaved


Method


Preheat oven to 170 degrees.


Heat oil in a large frying pan over high heat. Mix flour, salt and smoked paprika together.


Dust lamb in flour and reserve remaining flour.Cook chops in batches for 1-2 minutes each side or until browned. Remove from frying pan and place in baking dish. Set aside.


Add leeks, onion, garlic and carrot to the pan and cook for 2-3minutes. Deglaze pan with red wine and add thyme, rosemary, passata, chicken stock and cherry tomatoes. Bring to a boil.


Pour over chops and sprinkle remaining flour over the top and cubed butter. Place baking paper over the top and then cover with foil. Place in oven for 3hours.


Remove lamb chops from liquid and strip meat off the bones and place in a pan. Discard bones.


Blend all the cooking liquid and vegetables together to create a smooth rich sauce. Add as much or as little sauce as desired to the lamb, place on a low heat to keep warm.


Bring a pot of salted water to the boil, add pappardelle and cook for 8-10mins. Strain and mix through sauce


Garnish with pecorino and chopped flat leaf parsley
